12 lasagna noodles
2 eggs, lightly beaten
2 1/2 cups ricotta cheese
2 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/4 tsp salt
1/4 tsp pepper
1/4 tsp ground nutmeg
1 jar (26 oz) spaghetti sauce
Browned ground beef (as much or as little as you want)
Cook noodles according to package directions. (if you are going to freeze this - cook 2 minutes less). Drain. In a bowl, combine eggs, cheeses, spinach, salt, pepper, and nutmeg. Lay noodles out on wax paper or clean counter. Spread 1/3 cup cheese mixture over eachc noodle and carefully roll-up.
Pour 1 cup of sauce on the bottom of a 9x13 baking dish. Place roll- ups seam side down over sauce. Add beef to the remaining sauce and pour on top of noodles. Bake uncovered at 375 for 20-25 minutes until heated through

These were SO good, and the rolls made it easy to give each person a portion without tearing apart the lasagna!
